Smoothie Saturday: The Green-Eyed Monster

Happy Saturday, lovelies!
I hope everyone had a great week with wonderful spring weather, 70s and 80s here in my patch of the Midwest! 🙂
Today I want to share my first recipe post, and I am super excited about this one!  I absolutely love love LOVE smoothies!!!  Something about fruit blended together transports me to a tropical island, complete with surf and sun….not to mention, they are practically dessert for me!

 There was actually more smoothie than this after I was done, but I poured some into my mason jar and forgot to take a picture, so I poured it back into the blender :).

  Put it in a mason jar with a lid, and you’re good to go!

I started using smoothies as meal replacers a couple months ago, and I have reaped so many benefits from them!  Almost everyday I have a smoothie either for breakfast, lunch, or sometime both, and almost always, it is a green smoothie.  I have an energy boost for my day, curbed mid-morning munchies, and I have lost a couple of pounds, too!
This smoothie I named the Green-Eyed Monster, and for good reason, too! It is packed with two types of green veggies, a healthy dose of antioxidants, and a tropical kick!
If you have never tried a green smoothie because the thought of having green roughage (or rabbit food as my husband calls it) blended together with fruit sounds less than appetizing, you are not alone!  I too, once thought this sounded disgusting until I finally gave it a try.  Now I almost always use kale in green smoothies, and even in my non-green smoothies! 
Now, I love cooked kale, but HATE the taste of raw kale. 
In the smoothies, the taste is either completely unnoticeable or it’s severely tempered by the tastes of the fruits.  The more variety of fruits you use, the less intense the flavors of the greens will be.
SO, without further ado, here is my recipe!  It’s pretty versatile, in that you can substitute different fruits for different tastes or allergies, and you can even use different greens.
The Green-Eyed Monster Recipe:
Ingredients:
1/2 cup fresh or frozen raspberries
1/2 cup mango (about half a large mango), chopped
1/2 a banana
1 cup kale, loosely packed (about 1 large leaf)
1 cup spinach, loosely packed (about a small handful)
1 cup water or other liquid
Yields:  2-2 1/2 cups (16-20oz.)
Directions:
Note:  If you use fresh raspberries or are lucky enough to have a blender that can eat iPads, then you can skip all these steps and just blend all the ingredients together.
1).  Using the Crush Ice button, blend up the raspberries into small pieces to make it easier to blend them with the other ingredients.
2).  Roughly chop up the mango and banana and add it to the blender.
3).  Pack the kale and spinach on top of the other ingredients, and add the water or orange juice last.
4).  Start the blender on puree, for about 10 seconds, and then liquefy for 15 seconds.
5).  Enjoy!!
This smoothie is very refreshing to have first thing in the morning.  It’s not too heavy, so it doesn’t bother a stomach that has been empty for 8 hours, but being rich in fiber, it leaves me feeling full enough to last until lunch time.  It’s 100% vegan, raw (for you raw foodies out there!), gluten-free, healthy, and uber delish!

    Haha, yes that sometimes happens, depending on the ratio of raspberries to greens. Did you enjoy the taste, though?
